“Delicious Pethe ki Sabji Recipe – Easy Pumpkin Curry with Aromatic Spices”

Here is a simple and delicious recipe for “Pethe ki Sabji,” a popular Indian dish made with pumpkin (petha) and a blend of aromatic spices:

Ingredients:

  • 500 grams pumpkin (peeled, deseeded, and cut into cubes)
  • 1 large onion (finely chopped)
  • 2-3 garlic cloves (minced)
  • 1-inch ginger (grated)
  • 2-3 green chillies (slit lengthwise)
  • 2 tomatoes (finely chopped)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder (adjust to your spice preference)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves (for garnish)

Instructions:

  1. Heat oil in a pan or kadhai over medium heat. Add cumin seeds and mustard seeds. Let them splutter.
  2. Add the chopped onions and sauté until they turn translucent.
  3. Stir in the minced garlic, grated ginger, and green chillies. Sauté for another minute or until the raw aroma disappears.
  4. Add the chopped tomatoes, turmeric powder, red chilli powder, coriander powder, and salt. Cook the masala until the oil starts to separate from it.
  5. Now, add the pumpkin cubes to the masala and mix well so that the pumpkin is coated with the spices.
  6. Cover the pan and cook the pumpkin on low to medium heat for about 15-20 minutes, or until the pumpkin becomes soft and cooked. Stir occasionally to avoid sticking to the bottom.
  7. Once the pumpkin is cooked, sprinkle garam masala and give it a gentle stir.
  8. Garnish with fresh coriander leaves.
