Ingredients:
- 500 grams pumpkin (peeled, deseeded, and cut into cubes)
- 1 large onion (finely chopped)
- 2-3 garlic cloves (minced)
- 1-inch ginger (grated)
- 2-3 green chillies (slit lengthwise)
- 2 tomatoes (finely chopped)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder (adjust to your spice preference)
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves (for garnish)
Instructions:
- Heat oil in a pan or kadhai over medium heat. Add cumin seeds and mustard seeds. Let them splutter.
- Add the chopped onions and sauté until they turn translucent.
- Stir in the minced garlic, grated ginger, and green chillies. Sauté for another minute or until the raw aroma disappears.
- Add the chopped tomatoes, turmeric powder, red chilli powder, coriander powder, and salt. Cook the masala until the oil starts to separate from it.
- Now, add the pumpkin cubes to the masala and mix well so that the pumpkin is coated with the spices.
- Cover the pan and cook the pumpkin on low to medium heat for about 15-20 minutes, or until the pumpkin becomes soft and cooked. Stir occasionally to avoid sticking to the bottom.
- Once the pumpkin is cooked, sprinkle garam masala and give it a gentle stir.
- Garnish with fresh coriander leaves.
