Matar Pulao Recipe: Fragrant Pea Pulao

Ingredients:

  • 1 cup Basmati rice
  • 1 cup green peas (fresh or frozen)
  • 1 large onion, thinly sliced
  • 2-3 green chilies, slit
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon cumin seeds
  • 4-5 whole cloves
  • 4-5 green cardamom pods
  • 1 cinnamon stick
  • 1 bay leaf
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt, to taste
  • 2 tablespoons ghee or oil
  • 2 cups water
  • Fresh coriander leaves, chopped (for garnishing)

Instructions:

  1. Wash the Basmati rice thoroughly under running water until the water runs clear. Soak the rice in water for 30 minutes. Drain and set aside.
  2. Heat ghee or oil in a heavy-bottomed pot over medium heat. Add cumin seeds, cloves, cardamom pods, cinnamon sticks, and bay leaves. Sauté for a minute until the spices release their aroma.
  3. Stir in the ginger paste and garlic paste. Sauté for a minute until the raw smell disappears.
  4. Add the sliced onions and green chillies. Sauté until the onions turn golden brown.
  5. Add the green peas and cook for a couple of minutes.
  6. Add the soaked and drained Basmati rice. Sauté gently for 2-3 minutes, ensuring the rice is well coated with the spices.
  7. Add turmeric powder, garam masala, and salt. Mix well.
  8. Pour in 2 cups of water and bring the mixture to a boil.
  9. Once the water starts boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let the rice cook for about 15-20 minutes or until the rice is cooked and the water is absorbed. You can also place a cloth under the lid to prevent moisture from escaping.
  10. Once the rice is cooked, remove the pot from the heat and let it sit, covered, for 10 minutes. This allows the steam to redistribute and the flavours to meld.
  11. Gently fluff the rice with a fork to separate the grains.
  12. Garnish with chopped coriander leaves.
  13. Serve the fragrant Matar Pulao hot with yoghurt, raita, or your favourite side dish.
