Here’s a delicious Kadhai Paneer recipe for you:

Ingredients:

  • 250 grams paneer (Indian cottage cheese), cubed
  • 2 medium-sized onions, finely chopped
  • 2 medium-sized tomatoes, finely chopped
  • 1 capsicum (green bell pepper), thinly sliced
  • 2-3 green chillies, finely chopped (adjust to your spice preference)
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chilli powder (adjust to your spice preference)
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon kasuri methi (dried fenugreek leaves)
  • 2 tablespoons oil
  • 1 tablespoon ghee (clarified butter)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat the oil in a kadhai or a deep-bottomed pan over medium heat. Once the oil is hot, add the cumin seeds and let them splutter.
  2. Add the finely chopped onions and sauté until they become translucent and lightly golden.
  3. Stir in the ginger-garlic paste and chopped green chillies. Cook for a minute or until the raw smell disappears.
  4. Add the chopped tomatoes and cook until they turn soft and the oil starts to separate from the mixture.
  5. Now, add turmeric powder, red chilli powder, coriander powder, and salt. Mix well and cook for a couple of minutes to allow the spices to blend.
  6. Toss in the thinly sliced capsicum (green bell pepper) and cook for a few minutes until they are slightly tender yet retain their crunch.
  7. Crush the kasuri methi between your palms and add it to the mixture, along with the garam masala. Mix well.
  8. Now, add the cubed paneer to the kadhai and gently combine it with the masala. Be careful not to break the paneer pieces.
  9. Drizzle the ghee over the paneer and give it a final mix to coat the paneer evenly with the spices. Simmer for a couple of minutes to allow the flavours to meld.
  10. Turn off the heat and garnish with fresh coriander leaves.

Your flavorful and spicy Kadhai Paneer is ready to be served! It pairs wonderfully with Indian bread like naan, roti, or paratha. Enjoy this delicious vegetarian dish with your family and friends!
