Delicious Kaju Katli Recipe: How to Make Irresistible Kaju Barfi at Home – Indian Sweet Treat for Festivals and Celebrations!

Kaju Katli, also known as Kaju Barfi, is a popular Indian sweet made from cashew nuts (kaju) and sugar. It is a delightful and rich dessert that is commonly prepared during festivals, celebrations, and special occasions in India. The name “Katli” comes from the Hindi word “Katli,” which means thin slices, as the sweet is usually served in the form of thin, diamond-shaped pieces.

Here’s a simple recipe for making Kaju Katli:

Ingredients:

  • 1 cup cashew nuts (kaju)
  • 1/2 cup sugar
  • 1/4 cup water
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon ghee (clarified butter) or a little more for greasing
  • Silver leaf (varq) for decoration (optional)

Instructions:

  1. Begin by grinding the cashew nuts to a fine powder in a food processor or blender. Be careful not to over-grind as the nuts might release their oils.
  2. In a non-stick pan, combine the sugar and water. Bring it to a boil, stirring continuously to dissolve the sugar.
  3. Once the sugar syrup reaches a one-string consistency, add the ground cashew nut powder and cardamom powder. Keep stirring the mixture on low to medium heat to prevent lumps.
  4. Add a tablespoon of ghee and continue cooking the mixture. The cashew mixture will start to thicken and form a dough-like consistency.
  5. Turn off the heat when the dough starts to leave the sides of the pan and comes together as a mass.
  6. Transfer the hot cashew dough onto a greased plate or a parchment paper-lined tray.
  7. Allow the dough to cool slightly until it becomes easy to handle. You can apply a little ghee to your hands to prevent sticking.
  8. Flatten the dough with your hands or use a rolling pin to form a smooth, even layer. You can aim for a thickness of about 1/4 inch.
  9. While it’s still warm, use a sharp knife to cut the Kaju Katli into diamond-shaped or square pieces.
  10. Optionally, you can garnish each piece with a silver leaf (varq) for added decoration.
  11. Let the Kaju Katli cool completely and then store them in an airtight container.
