Mung ki dal ka halwa


Mung ki dal ka halwa, also known as moong dal halwa, is a popular Indian dessert made from yellow split mung beans, ghee (clarified butter), sugar, and flavoured with cardamom and nuts. It is a rich and decadent sweet dish that is often served during festivals, weddings, or as a special treat.

Here’s a simple recipe for making mung ki dal ka halwa:

Ingredients:

  • 1 cup yellow split mung beans (moong dal)
  • 1 cup ghee (clarified butter)
  • 1 cup sugar (adjust according to taste)
  • 3 cups water
  • 1/2 teaspoon cardamom powder
  • Chopped nuts (such as almonds and cashews) for garnishing
  • Raisins for garnishing (optional)

Instructions:

  1. Wash the mung dal thoroughly and soak it in water for about 2 hours. Drain the water afterwards.
  2. Grind the soaked mung dal into a coarse paste using a blender or food processor. Set it aside.
  3. Heat a heavy-bottomed pan or kadai over medium heat and add the ghee. Allow it to melt.
  4. Add the ground mung dal paste to the melted ghee and cook it on low to medium heat, stirring continuously.
  5. Keep stirring the dal paste until it turns golden brown and releases a nutty aroma. This process may take around 15-20 minutes.
  6. In a separate saucepan, heat the water and sugar together to make a sugar syrup. Stir until the sugar dissolves completely.
  7. Slowly pour the sugar syrup into the cooked mung dal paste while stirring continuously. Be careful as it may splutter.
  8. Cook the mixture on low heat, stirring continuously, until the halwa thickens and starts to leave the sides of the pan. This may take another 10-15 minutes.
  9. Add the cardamom powder and mix well.
  10. In a separate small pan, heat a little ghee and roast the chopped nuts until they turn golden brown. Set them aside for garnishing.
  11. Once the halwa reaches a thick and pudding-like consistency, remove it from the heat.
  12. Garnish the mung ki dal ka halwa with roasted nuts and raisins (if using).
  13. Serve the halwa warm or at room temperature. It can be enjoyed on its own or with a scoop of vanilla ice cream or a dollop of fresh cream.
