Delicious Veg Biryani Recipe: Aromatic Vegetable Biryani with Basmati Rice and Mixed Veggies!

“Veg Biryani” or Vegetable Biryani is a popular Indian rice dish made with fragrant basmati rice, mixed vegetables, and a blend of aromatic spices. Here’s a basic recipe to make delicious Veg Biryani:

Ingredients:

For Rice:

  • 2 cups Basmati rice
  • 4 cups water
  • Salt, to taste

For Vegetable Mixture:

  • 2 cups mixed vegetables (carrots, peas, beans, potatoes, etc.), chopped
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 1/4 cup chopped mint leaves
  • 1/4 cup chopped coriander leaves
  • 2-3 green chilies, slit
  • 2 teaspoons ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • Salt, to taste

Whole Spices:

  • 1 bay leaf
  • 4-5 cloves
  • 4-5 green cardamom pods
  • 1 cinnamon stick
  • 1-2 black cardamom pods
  • 1 teaspoon cumin seeds

For Layering:

  • Saffron strands soaked in warm milk
  • Ghee (clarified butter)
  • Fried onions (optional)

Instructions:

  1. Wash the basmati rice thoroughly and soak it in water for 30 minutes. Drain and set aside.
  2. In a large pot, bring 4 cups of water to a boil. Add salt and the soaked, drained rice. Cook until the rice is 70-80% cooked (it should still have a bite to it). Drain the rice and set aside.
  3. Heat some ghee or oil in a heavy-bottomed pan. Add the whole spices (bay leaf, cloves, cardamom pods, cinnamon, black cardamom, cumin seeds) and sauté until fragrant.
  4. Add sliced onions and sauté until they turn golden brown.
  5. Stir in the ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
  6. Add the chopped tomatoes and cook until they turn soft and the oil starts to separate.
  7. Mix in the chopped vegetables and sauté for a few minutes.
  8. Add the turmeric powder, red chili powder, and salt. Mix well.
  9. Stir in the yogurt, mint leaves, and coriander leaves. Cook for a few more minutes.
  10. In a large pot or a biryani pot, start layering the biryani. Begin with a layer of the vegetable mixture, followed by a layer of partially cooked rice. Sprinkle some garam masala and fried onions (if using).
  11. Repeat the layers until all the rice and vegetable mixtures are used up. Finish with a layer of rice on top.
  12. Drizzle saffron milk and ghee over the top layer of rice.
  13. Cover the pot with a tight-fitting lid. You can also seal the edges with dough or use a heavy plate to create a tight seal.
  14. Place the pot on low heat and cook for 20-25 minutes. This allows the flavours to meld and the rice to finish cooking.
  15. Once done, turn off the heat and let the biryani sit for another 10 minutes before gently fluffing it with a fork.
  16. Serve the vegetable biryani hot with raita, pickle, and papad.

Note: Biryani is a versatile dish, and you can customize the spices and ingredients to suit your taste. You can also add fried paneer cubes or cashew nuts for extra richness.
